Flamingos for a 1-Year-Old

One of my teachers asked me to make some treats for her daughter's first birthday party. She loves pink, so we decided to go with a flamingo theme for something cute but different. (No unicorns for her!)

I did a small "Smash Cake" in vanilla with plain and strawberry buttercream frosting. I had never made strawberry buttercream before, but it tasted pretty good. The cake has two surprises in the middle: a cavity filled with sprinkles and a ring of fresh strawberries between the layers. The top of the cake features a birthday princess flamingo made from fondant. (I named her Frannie, although I don't know why!) The cake topper can be saved as a memory-keeper, if they decide to do that. There are pink flamingo sprinkles as well as a pastel sprinkle mix around the sides and bottom of the cake.

For the other party guests, I made vanilla cupcakes with their own sprinkle surprise inside, all topped with strawberry buttercream, a fondant number 1, and a pink flamingo sprinkle. I also made flamingo sugar cookies, each wearing a golden birthday princess crown.
