Pina Colada Cupcakes

To celebrate my grandmother's birthday, I decided to take her favorite cocktail and turn it into a cupcake. Since she loves pina coladas, I made pineapple-coconut cupcakes with coconut buttercream frosting (tinted a sunny yellow) and decorated them with some shredded coconut and a maraschino cherry. They were so yummy, even people who claim they don't like coconut enjoyed them!
