Rainbow Cookie Cake

My sister loves rainbow cookies, so for her 21st birthday I made a rainbow cookie cake that looks and tastes like her favorite cookie. The three layers of almond cake were dyed pink, yellow, and green, with a layer of seedless raspberry jam between the layers.The outside was covered in smooth chocolate ganache. I was so happy to hear that she loved her cake, and that it tasted exactly like the cookies!
